Ingredients:
- 2 tsp olive oil
- 1 tsp butter or bacon fat (optional)
- 1/2 medium onion, finely chopped (about 3/4 cup)
- 1 stalk celery, finely chopped
- 1 medium Gold potato, peeled and cubed
- 4 cups fresh broccoli, including stems, chopped
- 1 Carrot shredded
- 2 cups low-sodium, fat-free chicken or vegetable broth
- 1 1/2 cups milk (cow, rice, almond, or soy)
- Salt to taste
- pepper to taste
Preparation:
Heat oil on medium heat in a soup pot or Dutch oven. Gently saut
