Broccoli Soup with potatoes

Ingredients:

  • 2 tsp olive oil
  • 1 tsp butter or bacon fat (optional)
  • 1/2 medium onion, finely chopped (about 3/4 cup)
  • 1 stalk celery, finely chopped
  • 1 medium Gold potato, peeled and cubed
  • 4 cups fresh broccoli, including stems, chopped
  • 1 Carrot shredded
  • 2 cups low-sodium, fat-free chicken or vegetable broth
  • 1 1/2 cups milk (cow, rice, almond, or soy)
