1 cup celeriac (celery root) pealed and shredded or cut into matchsticks
1 T mustard
2 t pickle juice
3-4 T carrot shredded (enough to add color)
4-5 dill pickles chopped (I like one that has bay leaf in the mix)
1 tart apple shredded
2-3 t parsley
3/4 C mayonnaise
salt to taste
Instructions
Mix Kohlrabi and celeriac in a bowl. Add the mayonnaise, mustard, pickle juice, pickles, and salt and pepper. Give everything a good mix. Shred the apple into the bowl. Add the parsley. Mix again. Give the salad and hour or so in the fridge to get the flavors to mix.
